Thanks!

Thanksgiving was wonderful. It's amazing to me what happens in just 1 year. One year ago Davis was just a few months old, now he is cruising all over the place, talking, laughing and understanding.

We spent a few days up in Bellevue with DH's parents. Friday night is the big Thanksgiving dinner. All the men cook (notice the chef's jackets) and the ladies get the night off...we get to enjoy good champagne (Cristal anyone?!). Every year the food is wonderful but the company is even better. What a great group of people.




I'm thankful for so much in my life, but most of all I'm thankful for my wonderful family and friends.

Quick-n-Tasty Din Din

I thought I would pass on a yummy recipe I made tonight for dinner...and of course I put my spin on it to make it a quick prep recipe. The version below is the Dottie Version, however you can find the Standard Recipe on Rachel Ray's ( I know she is annoying ) website. Whats the major difference? Cooking and prepping the chicken...seriously folks why waste your time cooking chicken if you don't have to? I found this great chicken at Trader Joe's called Just Chicken. It doesn't leave a funny aftertaste or give you burps (LOL) it just tastes good. So I now use that when a recipe calls for cooking or shredding chicken.







Chicken Salsa Verde Bake-- DOTTIE'S Version

Serves: 6 Prep: about 10 mins my way ;)



2 lbs (thats two containers) of Just Chicken

2- 16oz. jars salsa Verde

1- 15oz can kidney beans, rinsed and drained

1 cup sour cream

8oz bag of shredded Mexican style cheese



1. Preheat oven to 375.

2. Cut up your Just Chicken into smaller chunks.

3. Mix your Salsa, Kidney beans, Chicken and Sour Cream together.

4. Grease a 9x13 baking dish. Scatter 1 cup tortilla chips on the bottom (I crushed mine) and top with half of the chicken mixture and half of the cheese.

5. Repeat the layers and cover with the remaining 1 cup tortilla chips. Bake until cheese is bubbly, about 30min.



I halved the recipe since its just us and we have left-overs for tomorrow.

Ahhhhmazing

I was reading one of my fav blogs this morning and saw she was running a contest. I've never entered any quilt give-a-way contest but I have entered my apron onto the Angry Chicken 'apron of the month' contest. Anyway, I thought I would share the link with some of you who heart sewing and beautiful fabric like I do. If I could, I would sew and shop for fabric all day :)

A lot of nothing

Possibly a rant post...here I am sitting still watching the Biggest Loser thinking "I really want a 3 column blog". So I google it and find a site....lets just say I've spent the last 1hr+ trying to get it right through HTML codes and what do you know...I still have a two column! HAHAHAH I see these fab blogs of these crafty ladies (which I wonder if they work, have kids or husbands, or dogs, or a house, or quite possibly a life) just kidding! Anyway, I guess its just not going to happen right now for me. Does anyone out there understand the HTML coding? If so, I'll swap you something for a little work on this opportunistic site of mine :) Anyone...bueller, bueller?

Halloween FUN

We didn't have plans for Halloween, so at the last minute we loaded up the pirate and headed to my sisters for some Halloween fun and trick or treating. I didn't know how Davis would do, but he loved it. He had fun watching his cousins in their costumes, he didn't mind being dressed up for hours and he wanted to walk everywhere. He was sure to tell the home owners "bye bye" and even managed to blow them kisses. We even kept him up longer and visited my aunt and her lovely family.

The kid must have walked at least a 1/2 mile or more..but he wasn't about to be carried.

BTW, they know how to TorT..notice the cups :)


We saw alot of good pumpkins (thank god I didn't have to carve them :) but this one was our favorite!

It finally caught up with him, the lil' pirate took a seat by the car and wanted a "nack" ie snack.

With the weather getting yucky, I'm feeling the need to find another project to start working on. I owe a few people bags so I'm going to get started on those...more to come!
